Version pictured is with sliced fresh grilled pears instead of blueberries and extra cheese on top.
1/2 cup frozen Blueberries (optional)
1 cup of favorite stringy cheese – shredded ( Mozz, swiss, etc)
1 cup Mountain Morning pancake mix
1 cup Kodiak pancake mix
1/2 cup toasted walnuts (optional)
2 tbsp. oil
1 tsp vanilla extract
1 tsp almond extract
1 tsp cinnamon
1/2 tsp nutmeg
1 cup of milk
1/2 cup yogurt or kefir cheese
1 cup buttermilk
1/2 cup lard or coconut oil to fry in
Cast Iron Skillet
Mix egg, extracts, cinnamon, nutmeg, milk yogurt, buttermilk, oil and pancake mixes in bowl.
Melt 1 tsp of lard/coconut oil in skillet
add 1/4 cup of mix to heated pan, sprinkle 1 tbsp. of cheese on top, add just enough pancake mix on top to cover cheese. Let begin to bubble on edges, sprinkle a few blueberries and walnuts. Once edges are all bubbled, flip and cook until thoroughly cooked through. Remember cheese is inside so may look undone. If press on it, no batter should come out.
Alternately…can make with just cheese, no nuts or berries and top with favorite topping.
